Our easy Tasty Taco Soup is the perfect comforting recipe and great for using up any leftovers.
What's better than a bowl of comforting soup? A bowl of comforting soup with crispy tortilla strips!
200g leftover turkey, shredded
1 onion, finely chopped
1 garlic clove, crushed
1 can chopped tomatoes
600ml chicken stock
200g black beans, drained
198g tin of sweetcorn, drained
1 lime, quartered for serving
50g cheese, grated
2 x Capsicana Large Tortilla Wraps, sliced into thinstrips
1 avocado, chopped

Coriander, chopped
1. Using a stock pot or high sided pan fry the onions in 1 tbsp oil until soft (3-4 mins). Add in the garlic and cook for an extra minute.
2. Add in the chopped tomatoes, stock, Capsicana Tasty Taco Seasoning Mix and tomato paste. Turn the heat down and allow to gently simmer for 20 mins, stirring occasionally.
3. While the soup simmers fry the tortilla slices in cooking oil until golden and crispy. Set aside on kitchen towel ready for serving.
4. Return to the soup and add in the black beans, sweetcorn and leftover turkey simmer for 10 mins further until completely warmed through.
5. Serve the soup topped with cheese, salsa, avocado, a wedge of lime, fresh herbs and those crispy tortilla strips!
