Ingredients

Capsicana Mexican Tasty Taco Seasoning Mix

1 Tbsp oil

1 white onion, diced

1 red pepper, diced

500g beef mince

1 can red kidney beans, 400g

1 can chopped tomatoes, 400g

200ml mushroom stock, or another stock you have in the pantry

To serve

Steamed white rice

Grated cheese

Avocado, diced

Spring onion

Coriander, chopped

A squeeze of lime

Method

1. Heat oil in a medium pan. Add the onion and pepper and fry until softened, around 5 minutes. Add the seasoning mix and continue to fry for another 1-2 minutes or until fragrant.

2. Add the mince, breaking up with a spoon and fry until brown, around 5 minutes.

3. Pour in the kidney beans, tomatoes and stock. Mix well and reduce to a simmer and cook for 30 minutes, stirring a couple of times and alittle extra water if mixture gets too dry.

4. Serve on top of rice and top with cheese, avocado, spring onion, coriander and a squeeze of lime.
