Sticky Air Fryer Salmon

We love an air fryer recipe, especially using our cooking pastes for ultimate flavour! This recipe uses our Brazilian Cooking Paste with chilli, tomato and coconut. The paste is inspired by Brazilian dish moqueca and works perfectly with fish or chicken.

Ingredients

2 Salmon fillets

Capsicana Brazilian Wrap Cooking Paste

250g cooked rice

1 mango, peeled and finely chopped

1 tbsp onion, finely chopped

1 red chilli, finely sliced

1 lime, halved for squeezing

Fresh coriander, chopped

2 spring onions, finely chopped

Method

  1. Preheat your air fryer to 200C.
  2. Slice the salmon fillets into bitesize chunks then coat well in 1 tbsp cooking oil and a full sachet of Capsicana Brazilian Wrap Cooking Paste.
  3. Add the salmon to the air fryer basket in a single layer and cook for 5-6 minutes. At 3 minutes give the salmon a shake and baste with any left over marinade, before returning to the air fryer until fully cooked.
  4. While the salmon is cooking heat your rice and make the salsa. To make the salsa grab a large bowl and combine mango, onion, chilli, half the spring onions and a handful of chopped coriander. Squeeze over half a fresh lime and add a good pinch of salt then mix well.
  5. Serve the salmon with the cooked rice and fresh mango salsa, top with remaining spring onions and a wedge of lime.
