Our go to snack packed full of Latin flavour
At Capsicana comfort food comes in the form of quesadillas. We’re talking crispy tortillas, a tasty mushroom filling and stretchy melted cheese. What's not to love?
Capsicana Brazilian BBQ Wrap Seasoning Mix
400g Mushrooms, chopped
2 Onions, sliced
Capsicana Large Tortillas
300g Cheddar or Mozzarella Cheese, grated
Freshly Chopped Coriander
1. In a large pan fry the mushrooms, onions and 2 tbsp cooking oil over medium heat. Cook for around 10 minutes until the vegetables have softened and are starting to caramelise.
3. Remove from the heat and transfer the mushroom filling to a bowl. Discard any excess oil or moisture from the pan.
4. Place a tortilla in the dry frying pan and cover with a generous handful of grated cheese. Scatter over the mushroom mixture, along with a good sprinkle of Capsicana Brazilian BBQ Wrap Seasoning Mix and some fresh coriander. Finish with a second handful of grated cheese before topping with second tortilla wrap.
5. Leave the quesadilla to toast slightly on the bottom, pressing down with a spatula to help the layers merge together.
6. Gently flip the tortilla and toast on the other side for a few minutes, taking care not to burn or lose filling into the pan.
7. Enjoy with a fresh salad, salsa or guac!
