Mexican Oven Baked Chalupas

Ingredients

Capsicana Mexican Chipotle Fajita Seasoning Mix

Capsicana Mini Tortilla Wraps

300g chicken breast, sliced

150g cheese, grated

1/2 red onion, finely chopped

Handful of fresh herbs, chopped

Method

  1. Preheat the oven to 180C fan.
  2. In a hot pan, brown the chicken in a glug of cooking oil, then add in half the seasoning mix and cook thoroughly until the chicken is fully cooked through (approx. 10 mins in total).
  3. Line two large baking trays with baking parchment and lay out the tortilla wraps in one layer across the sheets, nicely spaced.
  4. Make a chipotle oil by combining the remaining seasoning mix and 2-3 tbsp cooking oil. Use a brush to generously coat the tortillas in the chipotle oil.
  5. Top each of the tortillas with the cooked chicken and a handful of grated cheese, then cook in the oven for 10-15 minutes. You'll know they're ready when the tortillas have become crispy and golden, and the cheese has melted.
  6. Scatter fresh herbs and red onion over the chalupas and serve alongside salad, veggies or rice for a tasty lunch!
