Mexican Chipotle Chicken and Corn Tacos

One of our favourite taco recipes, using only a handful of ingredients for full Latin flavour.

Ingredients

Capsicana Mexican Chipotle Fajita Seasoning Mix

Capsicana Mini Tortillas

300g Chicken, sliced

200g tin sweetcorn, drained

100g feta, crumbled

Handful fresh coriander

Method

  1. Coat the chicken in the seasoning mix and a little oil.
  2. Brown the chicken over a medium heat in 1 tbsp of oil. Once almost cooked add in a splash of water and mix well, continuing to fry until fully cooked through and the water has reduced (approx. 8 minutes).
  3. In a clean pan dry fry the corn over a high heat. Allow the corn to catch and brown a little, only stirring occasionally to even out the charring.
  4. Heat the mini tortillas and build the tacos with the chipotle chicken topped with the charred corn, crumbled feta and fresh coriander (torn or freshly chopped!)
