Fish Tacos and Zesty Slaw

We use our signature Mexican Fajita Seasoning Mix to coat the fish in authentic flavour of cumin and chipotle, then oven bake for perfectly flaky fish fillets

Ingredients

2 x white fish fillets (cod loin, haddock)

Capsicana Mexican Fajita Seasoning Mix

Capsicana Mini Tortilla Wraps

1 avocado

1/2 red onion

1/4 red cabbage

1/4 white cabbage

1 lime, halved

1 heaped tbsp natural yoghurt

Fresh coriander

Method

  1. Preheat oven to 200C (or ready the air fryer for quicker cook time!)
  2. Using kitchen towels pat dry the fish fillets, then coat generously with the seasoning mix and a little oil.
  3. Cook the fish fillets in the preheated oven for 15-20 mins until fully cooked and easily flaked with a fork (10 mins in the air fryer).
  4. While the fish cooks make a slaw by shredding the cabbages and onion, then mixing with 1 tbsp yoghurt, a squeeze of lime and a good pinch of salt.
  5. Heat your mini tortilla wraps, slice the avocado and chop your herbs for serving.
  6. Fill your tortilla wraps generously with the fish, zesty slaw, avocado and herbs! Squeeze over extra lime and enjoy!
