This quick and easy Mexican recipe is full of flavour. Our pinto beans are cooked in garlic and cumin, and make the perfect filling for these crispy taquitos. Oven baked for ease, these taquitos will be ready in 30 minutes.
Capsicana Refried Pinto Beans
Capsicana Large Tortilla Wraps
50-100g cheese, grated
Shredded lettuce, for serving
Fresh tomato salsa, for serving
Soured cream, for serving
Lime, in wedges for serving
1. Preheat the oven to 200C, or ready your air fryer if you have one!*
2. Spoon the Capsicana Refried Pinto Beans into the centre of each tortilla wrap in a neat line.
3. Top the bean mixture generously with grated cheese then roll into a thin cigar shape, tucking the contents tightly into the wrap as you go.
4. Place the rolled taquitos onto a lined baking tray, spacing them out nicely so they can cook evenly and are not overcrowded.
5. Brush lightly with cooking oil and cook for 20-30 minutes or until crispy and piping hot inside.
6. Serve with fresh salsa, shredded lettuce, soured cream, crumbled cheese and wedges of lime
*Option: If you have an air fryer that’s a great way to speed up cooking these crispy taquitos. Space them evenly in the basket are fry for 10 minutes on 200C.
