Brazilian Sweet Potato & Black Bean Stew

Ingredients

Capsicana Brazilian BBQ Wrap Seasoning Mix

2 Sweet potatoes, chopped into chunks

1 White onion, chopped

1 Red Pepper, chopped

400g tin black beans, drained

400g tinned tomatoes

200g tinned sweetcorn

300ml vegetable stock

For serving:

Fresh coriander, torn

Spring onion, chopped

Feta, crumbled

Method

  1. In a hot pan soften the onion and pepper in 2 tbsp cooking oil. Add in the sweet potato and seasoning mix then stir well and cook until fragrant (approximately 5 mins).
  2. Turn the heat down slightly and add in the tinned tomatoes and stock. Stir well and cook covered with a lid for approximately 30 mins. Stir regularly to ensure the sweet potato doesn't stick to the bottom of the pan.
  3. After 30 mins remove the lid to the pot and add in the drained black beans and the drained sweetcorn. Mix well and allow to cook for a further 15 minutes.
  4. Serve dressed with fresh herbs, onions and crumbled feta.
