Brazilian Chickpea and Sweetcorn Rice

Ingredients

Capsicana Brazilian BBQ Wrap Seasoning Mix

1 tbsp Olive Oil

1 Onion diced

4 Garlic Cloves minced

185g  of Long grain rice

2 cubes vegetable stock

1 small can of sweetcorn drained and rinsed

1 can of chickpeas drained and rinsed

Juice of 1/2 lime

Handful of chopped coriander

salt to taste

Method

  1. Put the rice in a sieve and rinse with cold water until the water runs clear. Set to the side.
  2. Heat the oil in a large pot over medium heat, add the onions and sauté for a couple of minutes until they begin to soften. Add the garlic and cook for another minute.
  3. Add the Capsicana Brazilian Smoked Paprika & Spices Seasoning Mix, the rice, vegetable stock, sweetcorn and chickpeas, mix well.
  4. Bring to a boil and cook until the water has reduced enough, then turn heat to low and cover. Cook for 12 min. then uncover and stir, cover again and continue to cook for another 5 min. or until rice is cooked.
  5. Add the coriander, lime juice, and salt to taste.
  6. Stir to combine and serve.
