Capsicana Brazilian BBQ Wrap Seasoning Mix
900g skirt steak
2 peppers
2 red onions
1 lime
Fresh herbs (coriander or parsley)
Olive oil
1. Fire up that barbecue or grab your griddle pan - we're ready for Brazilian BBQ.
2. Slice the steak into long thin strips and add into a large bowl.
3. Drizzle a good glug of olive oil over the steak (approx. 2 tbsp), squeeze the juice of half a lime and sprinkle over MOST of the seasoning mix, holding back a spoonful for later.
4. Mix the steak well in the seasoning and oil then leave to marinate.
5. In a small bowl add the remaining seasoning mix to 1 tbsp olive oil and a little lime juice. Set this aside as your marinade for basting the skewers later.
6. While the steak marinates chop the peppers and onions into large bite sized chunks and grab your skewers.
7. Weave the steak onto the skewers, slotting the veggies between the loops of steak. Push the steak and veggies along the skewers so they're nicely compact.
8. Cook the skewers on the hot barbecue or in a hot griddle pan, turning as you go (approx. 2 minutes each side). Remember to brush the skewers with the extra marinade as you go!
9. Serve the skewers on a platter with a generous scattering of herbs.
