BAKED HALLOUMI FAJITAS

Ingredients

Capsicana Large Tortilla Wraps

Capsicana Mexican Smoky Chipotle Fajita Seasoning Mix

225g halloumi, sliced

2 peppers, sliced

1 onion, sliced

Cooking oil

Fresh coriander

Method

  1. Preheat your oven to 180C/160C fan and grab yourself a large baking tray.‍
  2. In a large bowl mix the sliced peppers, onions and halloumi with 1 tbsp cooking oil and seasoning mix. Use your hands to mix well and evenly coat the ingredients. ‍
  3. Spread the vegetables and sliced halloumi out onto a large baking tray and cook in the oven for 20-30 minutes.‍
  4. Serve in warmed tortilla wraps loaded with lots of fresh herbs and dollops of guacamole (made with our Mexican Guacamole Mix). Kick things up a notch by adding Capsicana Full-On Feisty Salsa, or even a few spoonfuls of our refried beans.‍
