Mushrooms are all over social media and a popular veggie option popping up more on menus everywhere. We want to understand this food trend more and why people love them! To name but a few reasons, they’re a superfood, they’re delicious, they’re versatile, they’re used as a meat substitute, we could go on honestly! We’ve got some great ways to bring mushrooms into your diet, the Capsicana way. Here's how to bring a fresh Latin vibe to meal time and switch up your simple mushrooms on toast.
People are paying more attention to the products they consume. Are they healthy? Are they organic? Were they ethically farmed? Depending on the ones you buy, they will tick all boxes, particularly the healthy box. Mushrooms are known for being a rich, low calorie source of fibre, protein and better yet, they’re an antioxidant.
One of the biggest sell-points for mushrooms is that they’ve earnt the label of “superfood”, this is because they are packed full of nutrients. Some of the important nutrients to name but a few, would be selenium, vitamin D, glutathione and ergothioneine. We know they’re a mouthful, but to put it simply, they are all known to function as antioxidants.
Besides all of the health benefits of mushrooms, they’re just downright delicious! We’re big fans and we wanted to offer some of our favourite mushroom recipes to add a superfood, veggie-based meal option into your weekly mix.
Here at Capsicana, they’re never just recipes…but delicious Latin inspired dishes using our products to give them a feisty twist!
Ingredients:
● Capsicana Mexican Chilli & Honey Cooking Paste
● 275g large portobello mushrooms, sliced
● 1 onion
● 1 red pepper
● 1 green pepper
● Tortillas
● Guacamole, salsa, sour cream & grated cheese to serve
Ingredients:
● Capsicana Brazilian Smoked Paprika & Spices Seasoning Mix
● 2 tbsp. of Olive Oil
● 1 large Onion, thinly sliced
● 2 Garlic Cloves, minced
● 500g Mushrooms of your choice, sliced / roughly torn
● 2 tsp. fresh Thyme, chopped
● 65g Gruyere Cheese, grated
● Generous pinch of salt & black pepper
● 1 Ready Roll Puff Pastry Sheet
● Milk to brush the edges of the pastry
● Fresh Parsley chopped, for garnish
Ingredients:
● Capsicana Argentinian Garlic & Paprika Seasoning Mix
● 400g mushrooms, sliced
● 1 pepper, chopped
● 2 onions, chopped
● 2 cloves of garlic
● Capsicana Large Tortillas
● 300g of cheddar or mozzarella, grated
● fresh coriander, chopped
This is originally a chicken taco recipe, however there’s nothing to say we can’t try it with mushrooms instead!
